There is no difference on whether Mass is celebrated with red versus
white wine; it's just a matter of taste.
I'm not sure what you mean with respect
to the die at the bottom of the Easter
candle. There are five grains of
incense, representing the five Wounds
of Christ. These grains are usually
embedded into red wax shapes (nails)
that might resemble dice, especially
from a distance.
